The 3-metre long double wood-fired grill is the focal point of Blue Smoke; with an open kitchen and chef interaction, the restaurant transforms into a sensory sanctuary.
Cooking over hot embers is a classic way of producing outstanding flavours in aged steaks, meats, seafood, and vegetables. The chefs develop a flavour repertoire by employing sustainable British woods such as elder, birch, and oak, as well as imported olive wood for special occasions.
